Is it possible to scan an older printed document directly into LO?
I have an old 2 page document that I want to reproduce and modify with LO but
don't find any entries in the menus for scanning directly into LO. This is in
a Linux system and would probably use xine for the scanning.

Using LO 3.5 (build 403) under openSUSE 12.2 my laser printer (Brother
HL-1440) doesn't show up in the printer dialog box when I try to print
something.
The first image taken from "tools > Options" shows the printer is being
seen in the FAX list:

I'm not sure why you think there should be an icon since there isn't one.
For an envelope click on "Insert", then select "Envelope" from the drop down
menu.
That will bring up a dialog box where you can enter the address information.
